Ingredients
14 Fresh Pitted Medjool Dates
6 McVitie’s Rich Tea biscuits
3 tbl spoon Coconut Oil
1/2 cup Coconut Cream
Sml tsp healthy Peanut or Almond Butter
1/2 Cup Dark Choc Chips
Tsp Vanilla Essence
Salt flakes
Instructions
1. Soak dates in boiling water 10 mins.
2. Crush biscuits in a zip lock bag.
3. Melt 2 sml table spoons of coconut oil. Combine with biscuit crumb. Add to silicone moulds and flatten/compress the crumbs with a utensil.
4. Add dates, coconut cream, peanut butter, vanilla essence, salt to a blender and blend until smooth and creamy. Add a very small amount of the left over date water to the blender until you get smooth consistency.
5. Add caramel to the biscuit base and freeze for 20 minutes while you clean up.
6. Melt dark choc chips and 1 tbl spoon coconut oil and spread over the caramel. Add a tiny sprinkle of salt flakes. Put in the freezer overnight before serving.
